What creationist organization makes their staff sign a pledge which basically says that if they find any contrary evidence, the Bible always trumps the evidence?

Answers in Genesis and the Institute for Creation Research both have (or recently had) such pledges - it's too close to my bedtime for digging up text now, though. This old geezer needs his sleep.
